Quinta dos Carvalhais allies knowledge and experience with innovation to create intense but delicate wines of great elegance that reflect the diversity and enormous potential of the Dão region.TASTING NOTESQuinta dos Carvalhais Espumante Reserva Rosé 2007 has a pink-salmon hue with a fine and lingering mousse. Its bouquet is complex and subtle with mineral notes. It shows great freshness and floral touches, as well as red fruits, hints of dried fruits and toast. In the mouth it is rich and complex, with a lively attack, a stimulating and well-balanced acidity and rather creamy and well-integrated bubbles. It has an elegant and lingering finish.WINEMAKER: Manuel VieiraVARIETIES: Touriga Nacional, EncruzadoWINEMAKINGThe Touriga Nacional grapes were picked early so as to ensure a fine acidity and were immediately gently pressed, without stalk removal or crushing in a pneumatic press. The free run juice (“bica aberta”) was fermented in the free-flowing in stainless steel vats at a temperature of about 16ºC. Following the same method, the Encruzado grapes were immediately pressed in a pneumatic press. A portion of the blend was fermented in French oak hogsheads and the remainder in stainless steel vats, also at a controlled temperature of about 16ºC.MATURATIONThe wines that made up the final blend matured separately for about a year, Encruzado in used French oak hogsheads and the Touriga Nacional in stainless steel vats. Bottling prior to the second fermentation was carried out on 3 September 2009, and the wine subsequently matured on its lees until 23 December 2010. Disgorgement then took place, along with the addition of liqueur, a white wine from 2004, also from Quinta dos Carvalhais.STOREClassic sparkling wines, since they contain a great deal of carbon dioxide from the secondary, in-bottle, fermentation, can develop further, provided that they are stored in suitable conditions. In the case of sparkling wines from the Dão, their longevity is guaranteed, given that the region’s wines traditionally have potential for positive evolution in the bottle. The bottle should be kept horizontally in a dry and cool place, sheltered from light.SERVEServe between 6ºC-8ºC.ENJOYThe elegance of Quinta dos Carvalhais Espumante Reserva Rosé makes it excellent with white meat dishes, fish and desserts.
