55% Alicante Bouschet, 45% Syrah
The grapes selected were from Plot 17 (Alicante Bouschet) and Plot 7 (Syrah). These fertile plots situated at low altitude and rich in clay, offer a lot of freshness. After destemming, the grapes were picked manually prior to soft-crushing. Maceration took place at 10ºC for 3 days prior to fermentation in conically-shaped stainless steel tanks at a controlled temperature of 28ºC.
A wine of great character and aromatic complexity with notes of well-ripened wild fruit and hints of spiciness. On the palate, it has a structured acidity and smooth tannins that invite a long and delicate finish.
This wine pairs wonderfully with well-seasoned meat dishes, game and intense cheeses.
