PORT SANDEMAN THE PIONEER VINTAGE 2000
30% Touriga Nacional, 30% Touriga Franca, 20% Tinta Roriz, 10% Tinto Cão, 10% Tinta Barroca
After gentle crushing and partial destemming, the grapes underwent an intense maceration, in tank, for the whole period of the alcoholic fermentation, thereby extracting as much of the desirable constituents of the skins as possible, at a controlled temperature of 28ºC. During this phase, apart from strict temperature control during fermentation, the density was monitored, so as to choose the ideal moment to add the brandy, necessary to stop the fermentation. The wines balance and harmony, as well as its body and structure, are determined through grape selection and choice of the moment of arresting the fermentation. These two factors, decided by the winemaker case by case, determine the time of maceration and the wine's final residual sugar.
This is a deep-coloured wine with faint brick hues, dominated by aromatic notes of mint cedar and tobacco box. It reveals the presence of spices such as pepper and cinnamon, ripe black fruits and slight chocolate hits, the result of an excellent maturation. On the palate, displays an exceptional balance and structure, with harmonious tannins, and a long complex finish of cedar, mint, and ripe black fruits.
