Quinta dos Carvalhais Encruzado is a Dão single varietal white wine of exceptional quality. It represents the pinnacle of the Encruzado grape varietys elegance and richness. Quinta dos Carvalhais, thanks to decades of winemaking knowledge, marries experience with innovation to create supremely elegant wines with intensely delicate flavours that encapsulates the unique personality, diversity and enormous potential of the Dão region.
Quinta dos Carvalhais Encruzado has a citrus-like yellow hue with greenish hints. Its fresh bouquet is underpinned by mineral notes, overlaid with white fruit characters as well as perfectly harmonious hints of oak. On the palate, the lively acidity of the Encruzado variety comes to the fore and compliments the softness of its body, its creaminess and balance. The result is a complex finish with a lively aromatic persistence.
It was a good year for Dão white grape varieties, which displayed great quality, both from a phyto-sanitary point of view and in terms of overall balance.
The grapes, hand-picked at an ideal ripening stage, underwent full de-stemming and were softly crushed in a pneumatic press. The must was then subjected to static decanting at low temperatures for 24 hours, so as to reach the required level of clarity. After the selected yeasts were added, part of the blend was transferred to new, French oak barrels, where it fermented at temperatures not above 19ºC, for about 20 days.
Most of this wine fermented and matured for about 6 months in new French oak barrels, a period during which it was subjected to frequent stirring of the fine lees, so as to increase the sensation of volume and to render its aromas more complex. The remainder fermented and matured in stainless steel tanks, thus contributing to a greater balance in the final blend.
This wine has great potential for bottle ageing (5-10 years), as long as the bottle is kept horizontally in a dry and cool place, sheltered from light.
Serve between 12ºC-14ºC. Once open, it should be drunk immediately, although it may be kept in the refrigerator for 2 to 3 days, well corked, preferably under vacuum.
An excellent aperitif, it is robust enough to be in perfect harmony with smoked salmon, elaborate fish dishes, smoked fish, white meat or poultry.
