Quinta dos Carvalhais Alfrocheiro is a Dão single-varietal wine. Its exceptional quality and marked personality are a fine example of the best that can be obtained from this grape variety when grown in this region. Quinta dos Carvalhais, thanks to decades of winemaking knowledge, marries experience with innovation to create supremely elegant wines with intensely delicate flavours that encapsulate the regions unique personality.
Quinta dos Carvalhais Alfrocheiro Red is a fine and elegant wine. It has a deep red hue, an intense bouquet of ripe fruits (black plum and raspberry), aromatic herbs and warm spices. This wine has a consistent structure of tannins which best show off the best of this variety when grown in the Dão.

On arrival at the modern Quinta dos Carvalhais winery, the grapes were de-stemmed and softly crushed. The free-run juice is collected by gravity into stainless steel fermentation tanks with automatic temperature control. Here it fermented for about a week, with pumping-over to ensure the soft extraction of aroma components from the skins.
Following alcoholic fermentation, the wine was transferred to stainless steel tanks, where malolactic fermentation took place, followed by a period of 12 months maturation in French and American oak barrels, after which, blending, fining, filtering and bottling took place.
As with all fine Dão wines, this wine has a very long shelf-life, and can remain in excellent condition for over 10 years. Once open, it should be served on the same day, although it will keep well for some time if well sealed. The bottle should be kept horizontally, in a dry and cool place.
After maturing in bottle, it is natural that it develops a deposit, and it should therefore be decanted. Serve at between 17ºC-20ºC.
Quinta dos Carvalhais Alfrocheiro Red is excellent with meat and game dishes, and with different types of buttery cheese.
