QUINTA DOS CARVALHAIS RESERVA RED
DESIGNATION OF ORIGIN: DOP Dão
COUNTRY OF ORIGIN: Portugal
Quinta dos Carvalhais Reserva Red 2008 is a Dão wine of superior quality, the product of a selected blend only available in exceptional years. Quinta dos Carvalhais, one of the Dão regions foremost standard-bearers, allies experience with innovation to create very elegant wines with intensely delicate flavours to reflect the regions unique personality.
Quinta dos Carvalhais Reserva Red 2008 has a very dense red hue, and it has a bouquet reminiscent of floral aromas (violets) and black fruits (plum and cherry), well integrated with notes from the oak ageing. Its palate shows a well-balanced acidity and a lively attack, with violet, cedar and mineral aromas that linger in a very persistent finish.
In 2008 the winter registered low temperatures and the spring was rainy. During the latter, two instances of ground frost occurred, affecting flowering. Summer was dry and started with a sudden increase in temperature. There was a delay in the evolution of ripening due to the high temperatures, which caused a delay to the start of the vintage.
WINEMAKER: Manuel Vieira
VARIETIES: Touriga Nacional (65%), Tinta Roriz (35%)
The varieties were vinified separately. The grapes, in excellent condition, were softly crushed and vinified in the traditional way, for about 8 days, in stainless steel tanks, at controlled temperatures of 28ºC. Depending on the variety, pre- and/or post-maceration took place.
Following alcoholic fermentation the wine was taken to stainless steel tanks, where malolactic fermentation took place. It was subsequently matured in new oak barrels (45%), as well as used ones (55%), for a 12-month period. Only French oak of a fine grain from French cooperages was used. During maturation, many tastings took place, in order to monitor the evolution of the different wines. Thereafter, the blend was
prepared, and the wine was fined, filtered and bottled.
As with all Dão reds, this wine has a very long shelf-life, and it is in optimum drinking condition up to 10-15 years. The bottle should be kept horizontally, in a cool and dry place.
With a prolonged ageing in the bottle (4/5 years), it is natural that a deposit should develop, and the wine therefore requires decanting in order to be better enjoyed. Once open, it should be served on the same day, even though it will remain in good condition for some time, provided it is well sealed, ideally, under a vacuum. A large glass should be used, so that the wine may breathe and open up. It should be served at between 17ºC-20ºC.
Quinta dos Carvalhais Reserva Red 2008 is ideal with fine meats, game and intense
cheeses, both soft and cured.
