We selected the best grapes from low yield vineyards of our own vineyards, with a planting density of 4,000 plants per hectare. The grapes are collected in special boxes of 15kg each. It is only harvested in the morning to maintain a good temperature in the grapes until the arrival in the cellar. Once in the cellar, the boxes filled with grapes are deposited in a cold room, keeping the grapes for 3 days -10ºC. We select box by box and proceed to the despalillado and encubado in barrels of new American and Central European oak of 400 liters of capacity where previously we have eliminated a bottom of the own barrel. Introduce a water-cooled stainless steel plate to each barrel to be macerated cold at 8°C for 4 days. Daily we sink the cask, barrel by barrel, manually and once the fermentation begins, we close the cooling water so that the cask itself can reach during the fermentation at a maximum temperature of 26ºC. After 15 days we passed the grape to the pneumatic press to make a light pressing of no more than 0.5 bars. The elaboration of the different grape varieties is done separately and then for a minimum of 20 months in American oak barrels of 400 liters and Allier French oak barrels of 225 liters, all barrels are collected and the best of each is selected. Varietal, to spend a minimum of 10 months in barrels of 225 French oak. Finally the final coupage is prepared by lightly filtering it before bottling.
Color: Deep red high layer.
Aroma: Aroma powerful and elegant, presents a great diversity of nuances with a background of ripe red fruit on a very well integrated wood that gives complexity and distinction to the wine.
Taste: Majestic, velvety and silky touch, that slides through the mouth with density, noting the mature tannin and well polymerized with the oak. Very long and harmonious end of mouth.
Serve at 18ºC. Any precipitate that can be seen in the wine is natural, since we try to make the wine with the minimum filtration possible to be able to appreciate to the maximum its quality.
