We selected the best grapes from low yield strains from our own Sauvignon Blanc vineyards, with a planting density of 4,000 plants per hectare. The grapes are collected in special boxes of 15kg each. It is only harvested in the morning to maintain a good temperature in the grapes until the arrival in the cellar. Once in the cellar, the boxes filled with grapes are deposited in a cold room, keeping the grapes for 3 days at -10ºC. We select box by box and proceed to destemming and squeezing. We place all the resulting grape paste in a stainless steel tank with cooling system to subject the grapes to cold (0°C) film maceration for more than 16 hours. Then we pass the grapes to the pneumatic press for a light pressing of no more than 0.5 bars. The wort that is extracted from the press is decanted 24 hours in a static way and then we only fermented the clean part of must to the new American oak barrels of 400 liters of unit capacity at a temperature of 14ºC. Once the fermentation is finished, it is kept on lees until bottling.
Color: Yellow with greenish reflections.
Aroma: Of very high intensity, mineral, reminding aromas of tropical fresh fruit and compote.
Flavor: With good weight of fruit in the mouth, oily, dense, good final acidity and very long in the mouth.
Serve at 12ºC. Any precipitate that can be seen in the wine is natural, since we try to make the wine with the minimum filtration possible to be able to appreciate to the maximum its quality.
