Grape Varieties
A blend of the three leading French, Spanish and Portuguese varieties: 50% Cabernet Sauvignon, 35%, Aragonez (Tempranillo), 15% Touriga Nacional. Only grapes from top quality vineyards in the Alentejo region of southern Portugal are used. They mature perfectly in the hot and dry Mediterranean summer while retaining acidity due to the cool nights. Soils are infertile rocky schists, naturally low-yielding, producing concentrated, healthy fruit.

Taste and Food Matching
Deep ruby-violet colour with a concentrated aroma of dark fruits; subtle menthol notes with ripe, complex fruit and tannin on the pallet. The finish is intense and persistent. Serve at 16ºC with dishes of game or well seasoned red meat.

Vineyard Management
Sustainable production methods used. Crop reduction by removal of secondary shoots, de-leafing and green harvesting. Hand-picked into small boxes at peak of maturity. Screening and fruit sorting operations in the vineyard and over a sorting table at the winery.

Vinification
Grapes are gently crushed and moved by gravity into
temperature regulated steel or large oak vats and fermented at 27ºC with two pump-overs per day. Indigenous yeast ferments. Post fermentation maceration of 21 days.
