Carm Grande Reserva - Red Wine

They were vinified in our winery Quinta das Marvalhas in Almendra, in the heart of the Douro Superior.
We selected grapes Tinta Roriz, Touriga Franca and Touriga Nacional produced on our farms. We used the three castes, trying to gather the firm tannins of Tinta Roriz, the smooth tannins and rockrose notes of Touriga Franca, and the aromas of black berries and floral and fresh notes of the Touriga Nacional.
In 2011, the lack of rain and the heat was felt with particular emphasis at the time of maturity, forced us to a very demanding viticultural management to avoid the "water stress". Among the various techniques adapted to the climatic conditions of the Douro Superior, were priority: the protection of the bunch zone by vegetation and strictly control the phenolic ripeness in order to obtain the maximum aromatic potential.
In our cellar, with the latest technology and complete control of temperature, we eliminated clusters that were not in perfect condition, total destemming, soft crushing and thermal shock, then followed by a period of pre-fermentation maceration in the cold mill for about 12 to 24 hours, after which the mass was transferred to wide and low fermentation tanks, where they fermented for about 10 days, at temperatures between 24 and 26ºC.
On the nose, very fresh and intense, dominated by notes of wild black fruits and black cherries balanced with alluring "nuances of liquorice", and the aroma is complexed by notes of wood.
The palate is very concentrated, hot, with firm tannins and smooth texture, very intense and persistent end to show the strength of the wines of the Douro Superior.
This wine accompanies meats, cheeses and Mediterranean cuisine.
