Carm Reserve - Red Wine

They were vinified in our winery Quinta das Marvalhas in Almendra, in the heart of the Douro Superior. We selected grapes Tinta Roriz, Touriga Franca and Touriga Nacional produced on our farms. There were used three castes seeking to bring the firm tannins of Tinta Roriz, smooth rockrose notes and tannins of Touriga Franca, and the aromas of black berries and wild fruits, with floral and fresh notes of the Touriga Nacional.
In 2013, there was heavy rain and temperatures below average in the Upper Douro region, which caused a delay in the vegetative cycle. The hot, dry summer led to a lack of homogeneity in terms of maturities, forcing an almost daily control on the ground to determine the optimal ripeness of the grapes and its harvest time. So we got wines with great aromatic expression, balanced, fresh and with good acidity.
In our cellar with the latest technology and complete control of temperature, we eliminated clusters that were not in perfect condition, total destemming, soft crushing and thermal shock, then followed by a period of pre-fermentation maceration in the cold mill for about 12 to 24 hours, after which the mass was transferred to wide and low fermentation tanks where fermented for approximately 8 days at 22°C.
On the nose, very fresh and intense with notes of wild black fruits and black cherries balanced with enticing nuances of "Liquorice" and the aroma complexed by notes of wood.
The palate is very concentrated, hot, with firm tannins and smooth texture, very intense and persistent end to show the strength of the wines of the Douro Superior.
This wine accompanies meats, cheeses and Mediterranean cuisine.
